Race Day Granola

Here is the recipe from today’s granola that we enjoyed

Race Day Granola :  2 cups each,  rolled oats, rice crispies, Cheerios.  3 cups branflakes cereal.  1 cup each, chopped almonds, chopped pecans, chopped walnuts. 1 cup pepitas.  1 cup flax seed.  1 1/2 tsp. Salt. 1 1/2 cups dried fruit.   Mix in a really large bowl.  Then, in a sauce pot put 1 cup light olive oil,  1 cup honey, 1/2 cup dark brown sugar,  1 Tbl. Sp. Grnd. Cinnamon, and 1 Tbl. Sp.  Vanilla or orange extract.  Bring to a good boil over medium heat.   Pour over the dry ingredients and stir to coat well.  Pour out onto a large lined cookie sheet or two.  Lightly press to about 3/4 to 1 inch thickness and bake in a preheated 325 oven for 20 to 25 minutes.  Let cool before breaking into big clumps.  (A thinner layer will give you a crispier granola).  Glad you liked it.  Lori Clay 🙂
